]]>It’s finally Friday. The afternoon hours have been so full of Zoom meetings and emails that you’ve almost forgot tonight’s dinner! You and your closest friends will reunite in one’s house to enjoy a fun and cozy night in, where everybody is asked to cook something.
Ok, let’s face it. You’re not really a kitchen’s Queen, so this task makes yourself stressed as much as asking your boss for the next holiday plan!
It’s not because you’re bad at it, simply you’ve never had enough time to experiment new complex recipes. In fact, you really didn’t make a good impression with your grocery cake last time but your friends love you so much that gave you another chance.
Before starting with the preparation of the easiest cake you’ve ever done, be aware that the measurement of the ingredients is made with yoghurt pots, in order to make sure the quantity of dry/wet ones is well balanced, independently from the capacity of the container.
Consider this recipe as a versatile base, you could enrich with infinite combinations of ingredients.
N.B. This batter could be used for a healthier version of muffins or cupcakes, too.
Preparation Time: 10 min
Cooking time: 40 min
Oven degrees: 190°
Pre-heat the oven to 190°. Prepare a springform pan with a light grease on the sides then line the bottom with parchment paper.
Separate the egg whites from the yolks and put it in a separate bowl.
Mix the ingredients in this order: yoghurt, egg yolk, oil, sugar, flour, vanilla extract. Stir until smooth.
In a separate bowl, whisk the egg whites with a pinch of salt until they are firm and soft.
Incorporate the two mixtures, being sure to use a spatula and slow upside-down movements. As a last step, add the baking powder and mix gently.
This step is optional but also the most enjoyable one. You can customize your cake in infinite ways by adding to the mix : fresh fruit, berries, nuts, your favorite Superfood powder (our "bake bests" are with no doubt Essentials Blueberry & Açai or Sands of Nairobi Elixir), melted chocolate or chips, dried fruit, seeds, smashed cookies and so on. You can choose to incorporate it in the mixture or to dispose it between two layers of batter, for a surprise filling.
EVAH’S TIP: you can choose the flavor of the yoghurt basing on the type of ingredients you want to add later, for a perfect match of flavors.
For example:
Transfer the batter into the pan and bake in the pre-heated oven for approx. 40 minutes. Try insert a skewer in the center of the cake, it has to comes out almost clean. Then remove it from the mould and let it cool.
Now your cake is ready to be decorated. You can use fresh fruit, frosting or spread a mix of icing sugar and your favorite Superfood powder over it for a pop of color.

Combine all the ingredients in a blender jar and chop it until smooth. If the mixture tent to stick to the blade, then add a couple of tablespoons of cold water to make it creamy. Don't worry if the almonds break up roughly, it will give to the mixture an amazing crunchy effect.

Preparation Time: 15 min
Step 1 _ BLUEBERRY SYRUP
Combine the blueberries, lemon zest, lemon juice, sugar and water in a medium saucepan. Bring the mixture to a simmer over medium heat and cook, stirring occasionally, until the juices are reduced by half and bubbling thickly, 5-10 more minutes. Let cool to room temperature, then add EVAH foods | Maiko’s Kiss Elixir and puree smooth with a blender.
Step 2 _ CHEESECAKE MIX
In the pitcher of a blender, combine the goat cheese, cream cheese, milk, vanilla, lemon zest, sugar and juice and puree smooth.
Step 3 _ FILLING THE MOLDS
Divide the blueberry puree among 10 popsicle molds. Gently pour the cheesecake layer over the blueberry layer, leaving a scant half-inch of space at the top.
Use a chopstick to swirl the layers together slightly. Crumble the granola on top of the cheesecake layer and press the crumbles into the mixture so they stay put when frozen.
Place popsicles sticks in the molds and freeze until solid, up to 4 hours or overnight.
Then, remove from the molds and serve.

Cooking time: 8/10 min each sheet
First of all, prepare a large piping bag, fitted with a large round tip and line two baking sheets with parchment paper.
Pre-heat the oven to 160° and heat a pan with water till simmering.
Then place egg whites and granulated sugar in a heat proof bowl (glass, preferably) and, making sure the bottom of the bowl isn’t touching the water, whisk the mix over the steam until frothy for a couple of minutes till the sugar completely melted.
Whisk the mixture with a pinch of salt until they are firm and soft. Then, in a separate bowl, sift powdered sugar, almond flour and EVAH Essentials | Matcha & Kale together. Add the powdered ingredients to the egg whites and stir slowly, forming a letter J with a spatula.
The mixture is ready when the batter looks glossy and has a thick and creamy consistency.
Check first if the consistency of the batter is perfect grabbing a teaspoon of it and spoon onto the parchment paper. If the batter spreads out a bit and starts to look glossy then you’re ready to transfer the mixture to the piping bag.
Pipe as many circles as you could, bang the tray against the counter a few times each. This will help releasing air bubbles that are in the batter and prevent your macarons shells from cracking. Let your trays sit for around 30 min so the shells will dry out a little bit (when gently touching the surface they have to seem dry).
Bake one tray at a time, for 4 minutes. Then rotate it and bake for 4 minutes more. Take a look at them, if one side seems taller than the other maybe you should rotate it again. Pay attention to not overbake, once you see the top shiny and the feet formed the macarons are ready. Remove from the oven and let cool down before proceeding with filling.
Sift powdered sugar and EVAH Essentials | Matcha & Kale together. Set aside.
Cream butter on medium speed until creamy then add the coconut milk and the powdered ingredients and beat until mixture is perfectly incorporated. As a last step, add vanilla extract and beat again for 30 sec.
Put filling in the piping bag then pipe a dollop in each macaron and close the sandwich. Et voilà! Your macarons are ready to be enjoyed.
You can store them in the fridge, in an air tight closed container for 4/7 days.

Only step _ BLEND
Combine all ingredients in a food processor and blend until smooth and creamy. Then pour the mix in nice little bowls (or glasses, for a more elegant look) and leave them in the fridge for a couple of hours. Your dessert is ready!
N.B. You can use dates instead of avocados, just make sure to increase the amount of milk in order to reach the desired consistency.

Step 1 _ PREPARE THE MARINADE
Use a bowl to combine all the ingredients then add the (washed) shrimps. Let the marinade chill for 30 minutes.
Step 2 _ MAKE THE SAUCE
Put the ingredients for the sauce in a blender and mix them.
Step 3 _ GRILL
Pre-heat the grill and put the shrimp on skewers. Then grill them on each side for two minutes. Spread two tablespoons of the avocado sauce on each plate and place the skewers on it.

Chia seeds are a must, nowadays. However, not everybody knows that they were already considered a staple food from the ancient Aztecs and Mayans. In fact, “chia” is the ancient Mayan word for “strength”. Rich in Omega-3 fatty acids, fibers, proteins, essential minerals and antioxidants, they may significantly improve our health and beauty, since they’re an amazingly nutritive. The wellness of our heart, blood pressure, brain, skin and hair will get significantly improved if consumed daily.
We can use it as a universal topping or, thanks to their ability to absorb liquid and form a gel, they can also be used to thicken sauces or as an egg replacement. Anyway, one of the best ways to consume the correct daily amount of chia seeds is Chia Pudding. Jelly and sweet, you can make it using your favorite plant-based milk (together with a Superfood powder of your choice) and adding fresh fruits, compotes or granola as topping.
We love this delicate and fresh version but you can enjoy using many more ingredients (and layers).
So now let’s have a look at the 3 simple steps to create a delicious tropical version of Coconut Chia Pudding.

Cooling Time: overnight
Stir the ingredients together in a glass or jar. Let sit on the counter 10 min, giving it a stir every 2-3 minutes (to avoid getting any clumps). Then let it cool in the fridge from 1 hour to overnight. The more it sits, the more the seeds have time to expand and reach a jelly consistency.
Cut the apricots in little pieces and place them in a saucepan together with the passion fruit pulp and the sugar. Heat the fruit over medium heat, stirring frequently until the sugar has dissolved and you end up with a thick jam-like consistency. Add a little extra water if the compote is too thick. Let cool for 10 minutes then add EVAH Elixir | Bahama Mama and stir until incorporated. Store in the fridge.
Place the compote over the coconut pudding then decorate it with crunchy almonds and coconut flakes, for the perfect breakfast or an on the go snack.

Step 1 _ DRY INGREDIENTS
Pre-heat the oven to 180°C.
Sift the flour into a mixing bowl and add all the dry ingredients, included the maple syrup.
Step 2 _ FLAX EGG
Prepare your flax egg by adding 1 tbsp ground flaxseed meal to a bowl and the adding in 3 tbsp of hot water from the kettle, leave to sit for a minute to become gloopy.
Step 3 _ PREPARE THE ICING
In a separate bowl, mix the melted butter, cream cheese, vanilla extract and icing sugar with a whisk until smooth.
Step 4 _ COMBINE
Combine the wet and dried ingredients and stir until smooth. Transfer the batter in to the loaf pan (previously covered with parchment paper) and add let fall some spoons of vanilla icing inside. Place into the oven and bake for 40 minutes or until a toothpick inserted into the center comes out clean.
Step 5 _ SERVE
Once the bread is ready, let it cool before slicing. Finally, spread the rest of the icing over the top or use the cream to decorate the plate when serving.
